For the parsnip soup, first thinly remove the skin from the parsnips, wash and cut into thin slices. Chop the onion finely.

Heat butter in a saucepan. Sauté parsnips and onion in it at low temperature for three minutes, stirring frequently.

Sprinkle flour on top and stir. Add soup and bring to a boil. Finely puree the soup with a hand blender, then stir in crème fraîche. Season the parsnip soup with salt and freshly ground pepper to taste.
