For the beetle bean salad, soak the beans overnight. Drain and cook in unsalted water until tender, about 50 minutes. Rinse with cold water and drain.

For the marinade, first peel onion and chop finely. Mix with kernel oil, apple cider vinegar, salt, pepper, a pinch of cumin and the dried savory. Pour the marinade over the cooked beans and mix well. Let the beetle bean salad stand for a short time and serve.

If it has to go fast, canned beans can of course be used for the beetle bean salad.
