For the potato and cabbage casserole, peel the potatoes, cut into small pieces and boil in salted water. Meanwhile, preheat the oven at 180° C.

Peel the onions, halve them and cut them into strips. Lift the cabbage. Heat clarified butter in a large ovenproof pan or dish and brown the onions, add the cabbage and sauté.

Fold in the cooked potatoes with half of the cheese. Season with salt and pepper, depending on the cheese you may not need salt.

Sprinkle with remaining cheese, grate some nutmeg over it and bake in the oven on medium rails for 15 – 20 minutes.

Preparation Tip:

The potato and cabbage casserole is similar to the English Bubble 'n Squeak. Since you can't get the Teviotdale or other Scottish cheese here, Cheddar works as well.
