Use tweezers to remove any bones from the fillet. Cut salmon fillet into narrow slices, these again into narrow strips. Cut salmon strips very finely into cubes (chop). In a baking bowl, mix with salt and crushed mustard seeds. Add oil and the same mass juice of one lemon. Chop chives, dill, parsley and shallot, mix with salmon. Season with pepper and salt. Serve with brown bread.

Our tip: Fresh chives are much more aromatic than dried!
