For the gratinated medallions, fry bacon cut into strips, keep warm. Sauté the onions in the remaining fat as well and add to the bacon strips.

In the same pan, sauté the mushrooms and add to the remaining ingredients. Trim the lung roast and cut into nice medallions, season with salt and pepper and sear.

Put the meat in a baking dish and add 250 ml of cream to the remaining drippings, melt the Eckerl cheese in it and season with salt, pepper and parsley to taste.

Mix the onion with the bacon strips and mushrooms and spread over the medallions. Now spread the cream mixture over the medallions and bake in the oven at 180 degrees for about 20 minutes. Serve the baked medallions sprinkled with chives.

Preparation Tip:

Pasta, spaetzle or boiled potatoes go well with the gratinated medallions.
